Assefa Kebede, the Ethiopian-born former owner and chef at Vancouver's award-winning Nyala African Cuisine, traveled all over Africa gathering recipes and he shares some of his favorites tonight. He'll make mafe, a West African peanut stew; ingudie wat, an Ethipoian recipe featuring split peas with mushrooms; and the East African polenta-like cornmeal mush known as ugali.
